By the way, speaking of being a fatass, that is a downside of moving back home. I really have gained like 20 pounds since we moved back. Fucking hard to eat healthy there.

Anything with dough is. Moisture has so much to do with it.

Growing up, my dad and I would sometimes bake bread on weekends, especially sourdough bread. It took us a long time to figure out how to get the crust hard enough, but not too hard. I am sure kolaches are the same. It is really difficult to get the texture right.
